Cook Once and Eat Twice

  1. Cook up a beef for dinner tonight and enjoy a couple of tasty leftover meals for lunch or dinner the next day. Roast a beef roast and add root veggies like carrots and potatoes in the remaining 35 minutes of roasting for a complete meal. Put the leftovers to tasty use with these lunch and dinner ideas:
    - Greek salad sandwich: Add slices of lean beef, tomato, cucumber, red onion slices and feta cheese on a multi-grain roll.
    - Thai beef wrap: Wrap lean beef, grated carrot, red bell pepper, and fresh cilantro or basil in a whole grain tortilla and serve with sweet chili sauce.
    - Beef and orange salad: Toss lean beef slices with romaine lettuce, mandarin orange segments, sesame seeds, and an oriental dressing.
