Is there any difference in the nutritional value of canned and frozen fruits and vegetables?
Generally speaking, the recommended order in terms of nutritional value is fresh, frozen and then canned. In certain seasons, frozen produce may be more nutritious than fresh if the fresh has traveled from far away and was picked long before it ripened. New standards in canning are enhancing the quality of the products. If going with canned, look for products with little or no added salt, sugar and preservatives.

How many eggs should I eat per week?
High cholesterol level or not, most people can easily eat 3 or 4 eggs a week without a negative impact. More important is often how the egg is prepared and what other high fat items such as bacon, sausage or hash browns are served with it.

How do you recommend a novice go about introducing soy into their diet?
With the great variety of tofu and soy products in the stores today, there are lots of options. But likely the best ones for beginners are to use about 1/3 of a cup of soft tofu in a fruit shake, sprinkle soy beans on top of a salad or try chocolate-flavored soy milk.

I've heard about the beneficial fats in fish but I'm a vegetarian. Do any other foods contain these fats?
Try grinding flax seed on top of your cereal, use in baking or even on a salad. Flax supplies the beneficial omega-3 fats also found in fish.

Are citrus fruits the only source of Vitamin C?
Although traditionally known as the best source of C, other vitamin-C rich foods include red and yellow peppers, tomatoes and kiwi fruit.


I've been advised not to mix egg with wheat products. Can you suggest a replacement for eggs in baking?
There are several fascinating options for egg substitutes...of course, you'll have to choose the most logical one based on what you are making...One egg equals any of the following:

• 1/2 tsp. baking powder for each egg
• 2 tbsp. liquid + 2 tbsp flour + 1/2 tbsp shortening + 1/2 tsp baking powder
• 1/2 cup soft silken tofu
• 2 tbsp ground flaxseed + 1/8 tsp baking powder + 3 tbsp water
• 1 tbsp gelatin dissolved in 1 tbsp cold water, then add 2 tbsp boiling water and whip
• 1/2 mashed banana + 1/4 tsp. b. powder
• Egg Beaters (a pasteurized real egg product)
• 2 egg whites = 1 whole egg

If you eat about 4 to 5 apples a day, would this cause a problem to your health?
One of the key principles of healthy eating is to consume a variety of fruits and vegetables daily. Adults are encouraged to eat between 5 and 10 servings (roughly ½ cup each or the size of a tennis ball). Because all fruits and vegetables supply a slightly different mix of nutrients, its not recommended to limit yourself to only one or 2 choices. Having said that, apples have great health benefits including being good for your teeth, a good source of fibre and supplying a type of fibre called pectin which can help control cholesterol levels.


Is a banana really the best source of potassium?
One banana supplies about 450 milligrams of potassium. This is similar to a potato or a cup of honeydew melon. But, 1 cup of cooked winter squash supplies 890 mg, 1 cup cooked spinach 565, ½ cup tomato paste 560 and a cup of orange juice 500. All fruits and vegetables supply varying amounts of this valuable nutrient.
