breakfast savoury muffins
310 mL Western Family whole wheat flour 1 1/4 cups
175 mL Western Family all purpose flour 3/4 cup
10 mL Western Family baking powder 2 tsp
3 mL baking soda 1/2 tsp
3 mL freshly ground black pepper 1/2 tsp
2 mL salt 1/4 tsp
2 Western Family eggs
310 mL buttermilk 1 1/4 cup
15 mL Western Family olive or canola oil 1 tbsp
30 mL Western Family butter, melted 2 tbsp
3 green onions, sliced 3
125 mL Canadian back bacon or lean ham, diced 1/2 cup
125 mL cheddar cheese, grated 1/2 cup
125 mL red bell pepper, finely diced 1/2 cup

Preheat oven to 400°F (200°C). Spray a 12-cup muffin tin with nonstick cooking spray.

In a large bowl, combine flours, baking powder, baking soda, pepper and salt. In a medium bowl, whisk together eggs, buttermilk, oil and butter. Fold in green onions, bacon or ham, cheese and bell pepper. Make a well in the centre of the dry ingredients. Add the wet ingredients and fold mixture just until moistened.

Divide muffin batter into prepared muffin tin. Bake muffins for 18 to 20 minutes or until the tops are golden brown. Let cool in the pan for 5 minutes. Remove muffins onto a wire rack to cool slightly before serving.
Makes 12 muffins.
