Squash makes a great serving dish for rice, meats and even fruit.

Apple Stuffed Squash
2 acorn squash
500 mL Western Family 2 cups
unsweetened applesauce
125 mL raisins ½ cup
60 mL Western Family liquid honey ¼ cup
60 mL chopped walnuts ¼ cup
15 mL Western Family butter 1 tbsp
15 mL grated lemon zest 1 tbsp
10 mL fresh lemon juice 2 tsp
2 mL cinnamon ¼ tsp
1. Preheat oven to 375°F (190°C).
2. Cut squash in half and remove seeds. Combine applesauce, raisins, honey and walnuts. Fill squash with mixture. Dot each squash with butter. Sprinkle with lemon zest, juice and cinnamon. Place filled squash in shallow baking pan. Pour in hot water to ¼ inch (1 cm) depth. Bake, covered, in preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until squash is tender.
