whole wheat cinnamon buns

the ingredients

12 mL dry active yeast or 8g pkg (2 1/4 tsp)
250 mL warm water, divided (1 cup)
625 mL Western Family whole wheat flour(2 ½ cups)
250 mL Western Family all purpose flour (1 cup)
5 mL salt (1 tsp)
30 mL Western Family honey (2 tbsp)
75 mL Western Family canola oil(1/3 cup)
1 Western Family egg
60 mL Western Family butter, melted(¼ cup)
125 mL brown sugar (½ cup)
15 mL cinnamon (1 tbsp)

the method
1. In the bowl of an electric mixer, combine yeast and 75 mL (1/3 cup) warm water. Let stand until it becomes foamy, about 6 minutes. Add flours, salt, honey, oil, egg and remaining water. Mix with a dough hook on medium speed for 10 minutes or until dough forms and becomes soft. Transfer to a greased bowl. Cover and let rise until doubled in size, about 1 1/2 hours.

2. Meanwhile, grease a 9" x 13" baking pan with non-stick cooking spray. In a small bowl, combine brown sugar and cinnamon. Set aside.

3. Cut dough in half. On a lightly floured surface, roll out half of dough into a rectangle shape. Brush half of melted butter over dough.Sprinkle with half of sugar and cinnamon mixture. Roll the dough up, jelly-roll style into a log. Using a serrated knife, cut the log into 1 inch pieces. Place each piece in the baking pan. Repeat with other half of dough. Cover and let rise until doubled in size, about 1 hour.

3. Preheat oven to 350°F (180°C). Bake for 15 to 20 minutes or until golden brown. Remove from oven and immediately flip buns onto a rack and let cool.

Makes 24 buns.
