lemon + thyme roasted mixed potatoes

the ingredients
4 medium red potatoes, unpeeled, cut into 8 pieces
4 medium white potatoes, unpeeled, cut into 8 pieces
30 mL Western Family olive oil (2 tbsp)
625g yams, peeled and chopped 1 ¼ lbs
salt and freshly ground pepper to taste
15 mL chopped fresh thyme 1 tbsp
15 mL finely grated lemon zest (1 tbsp)

the method
1. Preheat oven to 350°F (180°C).
2. Combine all ingredients in a large greased roasting pan or baking sheet and mix well.
3. Roast for about 1¼ hours, turning occasionally, or until cooked through.

Makes 8 servings.
