Valentine’s apple pancake puff

Keep pancakes delicious and healthy by topping with yogurt and fresh fruit instead of butter and syrup.

the ingredients
60 mL packed brown sugar ¼ cup
60 mL Western Family butter ¼ cup
2 apples, cored, peeled if desired and sliced in very thin slices or rings (peaches also
work well)
2 eggs
250 mL milk 1 cup
15 mL Western Family canola oil 1 tbsp
250 mL Western Family all purpose flour 1 cup
15 mL Western Family flaxseed, ground 1 tbsp
15 mL granulated sugar 1 tbsp
10 mL baking powder 2 tsp
5 mL cinnamon 1 tsp
pinch salt pinch
Preheat oven to 375°F (190°C).
Prepare 8 to 9 inch heart or
round shaped pan by lining with
parchment paper or greasing well.
Melt brown sugar and butter in
microwave. Pour into bottom of pan.
Arrange apple slices or rings
decoratively over the brown
sugar mixture.
Whisk egg, milk and oil. In separate
bowl, mix flour, sugar, baking
powder, flaxseed and salt. Add dry
ingredients to wet and mix well.
Pour batter carefully over apples.
Bake for 35 to 40 minutes or until
lightly golden and cooked through.
Makes 4 servings.
