Chicken
Waldorf Sandwich
The Ingredients
75 mL(1/3 cup) Western Family light mayonnaise
30 mL(2 tbsp) Western Classics balsamic vinegar
15 mL(1 tbsp) Western Family lemon juice
15 mL(1 tbsp) Granulated sugar
375 mL(1-1/2 cup)Chopped cooked chicken
250 mL(1 cup) Broccoli florets, chopped finely
1 Granny Smith or other tart apple, cored, diced
60 mL (1/4 cup) Toasted walnuts or shelled sunflower seeds
2–3 Whole wheat pita rounds, halved
The Method
In a small bowl, combine light mayonnaise, balsamic vinegar, lemon juice
and sugar. Set aside. In a medium bowl, combine chicken, broccoli florets,
diced apple, and nuts or seeds. Add mayonnaise mixture and toss to coat.
Spoon chicken mixture into pita halves. Chicken mixture will keep in
the refrigerator for 3 to 4 days. To avoid a soggy sandwich, assemble
pita just prior to eating or no earlier than the night before. Wrap tightly
to transport.
Makes 4-6 sandwiches.
