A good way to tell if a food is high in fat is if it leaves grease on your fingers when you touch it. Fried food, donuts and some muffins are an example. These cranberry orange muffins provide a low fat option.

Cranberry Orange Muffins

250 mL raw cranberries 1 cup
1 small, unpeeled seedless orange, cut into 1
2” (5 cm) chunks
375 mL Western Family all-purpose flour 1½ cups
125 mL granulated sugar ½ cup
10 mL Western Family baking powder 2 tsp
3 mL baking soda ½ tsp
3 mL salt ½ tsp
0.5 mL ground cinnamon 1/8 tsp
0.5 mL ground allspice 1/8 tsp
1 egg
125 mL 2% milk ½ cup
30 mL unsalted butter, melted 2 Tbsp

1. Preheat oven to 400° F (200° C).

2. Place cranberries in food processor or blender to coarsely chop. Set aside.

3. Place orange in food processor or blender and puree. Set aside.

4. In medium bowl, sift together flour, sugar, baking powder, baking soda, salt and spices.

5. In a small bowl, beat together egg, milk and melted butter.

6. Stir the cranberries, orange puree and egg mixture into dry ingredients, just until combined.

7. Butter or spray 12 muffin cups and spoon in batter.

8. Bake about 25 minutes or until a toothpick inserted in the centre comes out clean.
