Cranberry & White Chocolate Oat Cookies

These cookies are “rich but real”. When you indulge, make it worthwhile.


250 mL Western Family butter, softened 1 cup
125 mL brown sugar, packed ½ cup
60 mL white sugar ¼ cup
5 mL vanilla 1 tsp
375 mL Western Family all purpose fl our 1 ½ cup
3 mL salt ½ tsp
5 mL baking soda 1 tsp
60 mL boiling water ¼ cup
500 mL Western Family quick rolled oats 2 cups
250 mL dried cranberries (available in bulk foods) 1 cup
250 mL white chocolate chips 1 cup
(available in bulk foods)

1. Preheat oven to 350°F (180°C).

2. In large bowl, beat together butter, sugars and vanilla until creamy. Add fl our and salt, mix well.

3. Dissolve baking soda in boiling water. Add to fl our mixture.

4. Stir in rolled oats, cranberries and white chocolate chips.

5. Drop by tablespoons 2" (5 cm) apart onto a baking sheet lined with parchment paper.

6. Bake 12-15 minutes.

Makes 2 dozen large cookies or 4 dozen small.
