Papaya
Breakfast Bread
625 mL Western Family all-purpose flour 21/2 cups
250 mL Western Family whole-wheat flour 1 cup
3 mL salt 1/2 tsp
5 mL Western Family baking powder 1 tsp
5 mL baking soda 1 tsp
5 mL grated orange peel 1 tsp
175 mL Western Family canola oil 3/4 cup
125 mL packed brown sugar 1/2 cup
125 mL low-fat plain yogurt or buttermilk 1/2 cup
60 mL fresh squeezed orange juice 1/4 cup
2 eggs
375 mL peeled, seeded and cubed fresh papaya 11/2 cups (or berries,
peaches or fruit of choice)
Streusel:
125 mL packed brown sugar 1/2 cup
10 mL Western Family all-purpose flour 2 tsp
45 mL cold unsalted butter 3 tbsp
60 mL unsweetened shredded coconut 1/4 cup

Preheat oven to 190° C (375° F). Lightly oil and flour 2, 8 x 4 inch
loaf pans.

In a large bowl, combine the 2 flours, salt, baking powder, baking
soda and orange peel; set aside.

In the bowl of an electric mixer, combine the oil and brown sugar and
mix until the sugar has
dissolved.

Add the yogurt, orange juice and eggs; beat until combined. Add the
flour mixture and mix until just combined (do not
overmix).

Fold in the papaya cubes and divide the batter between the two loaf
pans, smoothing the top with a spatula.

In a small bowl, combine all streusel ingredients. Using fingertips,
rub the butter
into the
sugar and coconut until the mixture is combined and crumbly.
Sprinkle
streusel over loaves, gently patting it into the batter.
7.
Bake for
35-45 minutes, or until a toothpick inserted into the center of the
loaves comes out perfectly clean. Cool in the pans for 15 minutes before
turning loaves onto a cooling rack. Cool completely before cutting
each loaf
into 10 slices.
Makes
2 loaves, 10 slices each.
