Using light versions of dressings and sauces, such as the ranch dressing in this recipe, can spare you up to 50% of the calories and fat in the regular versions!

Spinach Salad Sandwiches

7 hard-cooked eggs, peeled, minced
45 mL Hormel real bacon pieces 3 tbsp
3 green onions, chopped
1 mL salt ¼ tsp
2 mL black pepper ½ tsp
30-45 mL Western Family low fat 2-3 tbsp ranch dressing
8 slices European Grainary Loaf
4 button mushrooms, sliced
baby spinach leaves
extra low fat ranch dressing

1. Combine minced eggs, bacon, onions, salt, pepper and dressing in a bowl. Mix well. Spread on 4 of the bread slices.

2. Top with sliced mushrooms
and spinach leaves.

3. Spread a small amount of the extra dressing on the other 4 bread slices (to hold them to the spinach) and place on top to make 4 sandwiches.

4. Cut in half to serve.

Makes 4 servings.
