Barley
May help prevent: cancer, diabetes, heart disease, high blood pressure,
intestinal disease
Barley is rich in
fibre including both insoluble and soluble fibres. Both types of fibre
aid in bowel function and help to prevent intestinal
diseases such as irritable bowel syndrome. Beta-glucan works with other
soluble fibres to prevent intestinal absorption of dietary fat and cholesterol,
lowering ‘lousy’ LDL cholesterol. Soluble fibres also help
to lower blood sugar to prevent and manage diabetes. Potassium helps
to lower blood pressure and its B vitamins, including niacin, vitamin
B6 and folate, support healthy homocysteine levels, a strong immune system
and are important for energy metabolism. Barley also delivers tocotrienols,
antioxidants that have similar health benefits to vitamin E, lignans,
and phytoestrogens that appear to combat certain cancers.
Action Tip: Barley is well known in soups, but should be included in stews,
pilafs, and casseroles. It can also be enjoyed as a breakfast cereal or
added to salads.
