Bok
choy
May help prevent: cancer, heart disease, macular degeneration, osteoporosis
Bok choy,
also known as Chinese cabbage, supplies a team of disease-fighting
phytochemicals. As a cruciferous cousin, bok choy
delivers a
good supply of isothiocyanates. This potent cancer-fighter boosts the
body’s own defense against disease with the production of the antioxidant
glutathione. Glutathoine provides longer lasting antioxidant power against
disease, recycling itself over and over again. The lutein found in bok
choy helps to protect the eye, inhibits cancer growth and reduces the
risk of heart disease. In addition, these green leaves support strong
bones and prevent osteoporosis with their calcium and vitamin K content.
Potassium, beta-carotene, folate and vitamin C help to lower blood pressure
and protect the heart against disease.
Action Tip: Bok choy is excellent in oriental-style dishes such as stir-fry and
soups. Steamed, boiled or sautéed, bok
choy has a delicate flavour that complements vegetable or meat dishes.
Baby bok choy is tasty
in green salads.
