Brussels
Sprouts
May help prevent: cancer, heart disease, high blood pressure, osteoporosis
Brussels sprouts, known as tiny cabbages, belong to the cruciferous
family of cancer-fighting vegetables. Four tiny sprouts supply 30 calories,
no fat, and 3 grams of fibre together with folate, vitamin C, beta-carotene,
and potassium. Their calcium and vitamin K content help to build strong
bones and prevent osteoporosis. Numerous research studies have shown
that including a serving of cruciferous vegetables five times a week
can dramatically reduce the risk of developing a variety of cancers.
Brussels sprouts protect the heart with their homocysteine lowering folate,
cholesterol-lowering soluble fibre and blood pressure-lowering potassium.
Action: To preserve their nutrient and phytochemical content, it is
best to steam Brussels sprouts rather than boil them. Enjoy them on
their own or added to stir-fries.
