Buckwheat
May help prevent: cancer, heart disease, intestinal disease, obesity.
Despite its name
and resemblance to a grain, buckwheat is a seed and has no ties to
wheat, making it a healthy choice for those with celiac
disease or a wheat allergy. Buckwheat supplies protein, a hefty amount
of soluble fibre with minimal healthy fats. This heart healthy food lowers ‘lousy’ LDL
cholesterol with its soluble fibres, phytochemical team and phytosterols.
In addition, its protein, similarly to soy protein, appears to lower
blood cholesterol, cutting the risk for heart disease and stroke. The
flavonoids found in buckwheat also protect against cancer. Its soluble
fibres promote normal bowel function and lower risk for cancer and intestinal
diseases. Foods rich in soluble fibre have also been shown to control
blood sugars, supporting weight loss and preventing against diabetes.
Buckwheat also supplies magnesium, potassium, phosphorous, manganese
and vitamin K.
Action Tip: Look for buckwheat products including Japanese soba noodles,
buckwheat pancake mixes or cereals containing buckwheat. Buckwheat groats,
better known as kasha, have a distinctive nutty flavour and are delicious
as a pilaf, side dish or added to salads.
