Cabbage offers a strong team of cancer fighters including flavonoids,
indoles, phenolic acid, plant sterols and sulforaphane that can stop
the growth of cancer at every stage of its development. In addition,
red cabbage provides extra disease fighting potential due to its anthocyanin
pigments that create its brilliant purple colour. Red cabbage has twice
the vitamin C content of green-white cabbage and supplies calcium, magnesium
and phosphorous to support strong bones and healthy blood pressure. Although
green-white cabbage is lacking the powerful purple colour, it does supply
a large amount of cancer fighting compounds and contains twice as much
folate as its red counterpart. The combination of vitamin C and folate
in cabbage helps to cut the risk of heart disease. Both red and green-white
cabbage contain glutathoine a powerful antioxidant that supplies long
lasting disease protection.
Action Tip: Add shredded cabbage to salads and use a combination of green
and red cabbage in coleslaw. Add a different twist to sandwiches and
use red cabbage instead of lettuce.
