Cauliflower
May help prevent: cancer, heart disease, obesity.
Although lacking the brilliant colour of broccoli, cauliflower
packs a powerful disease-fighting punch. Cauliflower supplies few calories
but plenty of vitamin C, folate, potassium and fibre. These nutrients
team up to fight against heart disease by lowering blood pressure, bad ‘LDL’ cholesterol
and homocysteine levels. With low calories and filling fibre, cauliflower
supports weight loss and maintenance. As a cruciferous cousin, cauliflower
also provides a good source of isothiocyanates and indoles to battle
cancer and tumor growth in many ways, as well as battle the signs of
aging.
Action Tip: Dip cauliflower in lower fat dip or enjoy on its own. Add cauliflower
florets to salad, stir-fry, anti-pasto, soups, casseroles or stews.
Cauliflower is also delicious steamed and served with its cousin broccoli.
