Eggplant
May help prevent: aging, asthma, cancer, diabetes, heart disease, stroke
Although it is not the richest source of vitamins, the eggplant supplies
several plant compounds that prevent disease. Eggplants contain phytochemicals
known as saponins that display anti-inflammatory, anti-histaminic and
antioxidant properties. Saponins also reduce the risk of heart disease
by lowering cholesterol absorption in the intestine. Preliminary research
shows that eggplant contains substances that may help to fight asthma
by reducing bronchial spasms. Polyphenols present in eggplant keep the
skin healthy and fight the signs of aging. An eggplant also provides
small amounts of vitamin B6, folate, potassium, and copper. Eggplants
cut the risk of diabetes and heart disease with their blood sugar and
cholesterol-lowering pectin fibres.
Action Tip: Eggplants have a meaty texture that works well in a variety
of vegetarian dishes. Slices of eggplant are tasty in stir-fries, lasagna
or baked on their own. Enjoy grilled eggplant with barbeque fare.
