Lemons
and Limes

Lemons and limes contain many of the powerful phytochemicals found in
other citrus fruits. Their flavonoids limonene, citric acid, and citron
fight cancer, while the flavonoid quercetin protects against heart disease.
Ellagic acid and tannins work together to fight cancer and reduce the
risk of heart disease. Their rich vitamin C content boosts the immune
system, protects the heart, and combats cancer and infections. In addition,
vitamin C increases the absorption of iron in the body preventing against
iron deficiency anemia. Lemon and lime also supply beta-carotene, pectin
fibres, and potassium to prevent heart disease, lower blood pressure
and reduce the risk of developing cancer.
Action Tip:Lemon and lime juice add fantastic flavour to marinades and salad
dressings. Squeeze a lemon or lime wedge over vegetables, greens, seafood,
or chicken. Add the juice of a lime or lemon to avoid browning of fruit
salad, add juice to smoothies or squeeze lemon or lime into water or
tea.
