so, mushrooms are one fungi that should be included in your diet. Although
mushrooms are not full of colour, these nutrition stars are rich in vitamins
and minerals not abundant in other produce. Mushrooms are rich in the
mineral selenium, an antioxidant that is thought to cut prostate cancer
risk. Research also indicates that selenium appears to protect against
colon, lung and rectum cancers. Selenium in tandem with vitamin E acts
as an antioxidant to protect the heart. Mushrooms also supply significant
amounts of the B vitamins, folate, niacin, riboflavin and pantothenic
acid that work together to support healthy homocysteine levels and a
healthy heart. Its potassium content supports healthy blood pressure
levels. Mushrooms also contain small amounts of vitamin C and iron, which
contributes to a healthy immune system. Mushrooms deliver copper, an
essential trace mineral that acts as an antioxidant and together with
phosphorous promotes the growth of strong bones.
Action Tip: Mushrooms have a mild delicate flavour that fits well on veggie
platters and salads. Cooking mushrooms intensifies their mild woodsy
flavour. They're delicious in stir-fry, stew, soups, and casseroles. Try
a variety of different mushrooms including button, oyster, shiitake,
or portabella.
