The curly fringed leaves of parsley or flat leaves of Italian parsley
are rich in flavour and nutrition. One cup of parsley supplies a hefty
amount of vitamin C, beta-carotene, folate, calcium, magnesium, phosphorous,
potassium, and iron with minimal calories. The minerals calcium, magnesium,
and phosphorous promote strong bones, while potassium supports healthy
blood pressure levels. Vitamin C, beta-carotene and folate support a
healthy heart and fight against cancer. The iron and vitamin C work together
to beat fatigue and support a strong immune system. Parsley contains
the rich green pigment chlorophyll to freshen breath and inhibit the
growth of cancer. In addition, its lutein and zeaxanthin phytochemicals
act as internal sunglasses to preserve vision and protect against numerous
eye diseases.
Action Tip: Parsley is most commonly used as a garnish. Its mild sweet flavour
can also be used as a salad green or added to soups, stews, sauces, marinades,
and sandwiches. Chew on parsley sprigs to freshen breath.
