Although potatoes are touted as unhealthy starch, they pack
a powerhouse of vitamins and minerals. Potatoes supply a team of immune
boosting vitamin
C, iron and zinc. They also contain the B vitamins, niacin, vitamin B6,
thiamin and riboflavin that are important for normal immune function
and to protect the heart. In addition, potatoes supply magnesium, phosphorous
and a small amount of calcium to support strong bones and help to prevent
the development of osteoporosis. Their rich carbohydrate content makes
them an excellent energizing choice for sports activities and events.
The potassium in potatoes encourages recovery after exercise and helps
to lower blood pressure. Potatoes are also rich in fibre and contain
the body’s super antioxidants glutathoine and alpha-lipoic acid.
Action Tip: The key to enjoying potatoes is to enjoy them in moderation,
with few high fat toppings while keeping portion size in check. Enjoy
a small potato baked or roasted and topped with small amounts
of olive oil, onions, garlic, and other flavourful herbs. Make your own
healthy baked fries by tossing thinly sliced potato with olive oil and
baking until golden brown.
