Banana, Chocolate and Oatmeal Power Cookies

Ingredients

  • 2 cups (480 mL) Western Family Quick Oats
  • 2 T (30 mL) chia seeds
  • pinch sea salt
  • pinch cinnamon
  • 1/2 cup (120 mL) sugar
  • 2 large overripe bananas, mashed
  • 1 tsp (5 mL) vanilla extract
  • 1/4 cup (60 mL) Danone Oikos Plain Greek Yogurt
  • 2 T (30 mL) smooth peanut butter
  • 2 T (30 mL) pure maple syrup
  • 1/2 cup (120 mL) chocolate chips

Directions

1 Preheat the oven to 350 F.  Coat a large baking tray with cooking spray or parchment paper.
2 In a large bowl, mix together the oats, chia seeds, sea salt, cinnamon and sugar.
3 In a small bowl, add your mashed banana, vanilla, Greek yogurt, peanut butter and maple syrup and mix well.
4 Pour wet mixture into the dry mixture and mix well. Stir in chocolate chips.
5 Roll tablespoon size spoonful’s and press firmly into a cookie shape on your cookie sheet. Bake for 20-25 minutes, until oats are golden. Remove from oven and allow to cool on pan for 5 minutes.

Tip: You can add ¼ cup of toasted walnuts or pecans to this recipe for added antioxidants and minerals.
