BBQ Shredded Chicken Sandwich

Ingredients

  • Broccoli Slaw
  • 1/2 340 g bag Western Family Broccoli Slaw
  • 2 tbsp (30 mL) apple cider vinegar
  • 3 tbsp (45 mL) mayonnaise
  • 1 1/2 tsp (7.5 mL) honey
  • 1/2 tsp (2.5 mL) kosher salt
  • 2 tbsp (20 mL) cilantro, chopped
  • ground pepper to taste
  • BBQ Shredded Chicken
  • 2 200 g packages Maple Leaf Slow Roasted Chicken
  • 3 tbsp (45 mL) Western Family Kansas City Style BBQ Sauce
  • 1 tsp (5 mL) sriracha, or more if you like it spicier!
  • 8 slices Western Family Pulse Bread
  • 2 tbsp (30 mL) butter

Directions

Broccoli Slaw
1. Whisk together vinegar, mayonnaise, honey, cilantro and salt in a medium bowl.
2. Add broccoli slaw and toss to coat.

Assemble the Sandwiches
1. Toast the 8 slices of bread and spread with butter.
2. Heat the shredded chicken in the microwave for 1 minute on high.
3. In a medium bowl, mix together the chicken, BBQ sauce and Sriracha.
4. Top 4 slices of toast with chicken mixture and top with the broccoli slaw. Cover with remaining toast and serve.

Tip: You can substitute Maple Leaf shredded turkey or pork for this recipe.
