Beef and Broccoli Stir-Fry

Ingredients

  • 3 tbsp (45 mL) canola oil
  • 1 pound (455 g) Top Sirloin Roast, sliced into 1 - 1/2 inch pieces
  • 1/2 tsp (3 mL) kosher salt
  • 1 tbsp (15 mL) sesame oil
  • 1 tbsp (15 mL) ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • 3 cups (750 mL) broccoli florets
  • 3/4 cup (175 mL) water
  • 1/3 cup (75 mL) oyster sauce
  • 2 - 1/2 tbsp (37 mL) rice vinegar
  • 4 cups (1 L) white rice, cooked
  • 1/4 cup (60 mL) roasted peanuts, chopped
  • 1/4 cup (60 mL) cilantro, chopped

Directions

1.Heat canola oil in a large skillet over medium-high heat. Season beef with salt. Cook 2 to 3 minutes until nicely browned. Remove from skillet and set aside.

2.Add sesame oil, ginger, garlic and broccoli to the skillet and cook for 2 minutes. Add 3/4 cup of water and cook for 3 more minutes until the broccoli is crisp-tender.

3.Add oyster sauce and rice vinegar to the broccoli mixture in the skillet and cook for 1 to 2 minutes. Add the cooked beef.

4.Serve over cooked white rice and top with chopped peanuts and cilantro.

Tip: You can substitute chicken breast for the top sirloin and omit the peanuts if there are allergy concerns.
