Blueberry Almond Bran Muffins

Ingredients

  • 2 - 3/4 cups (675 mL) Robin Hood all-purpose flour
  • 1 - 1/2 cups (375 mL) wheat bran
  • 2/3 cup (150 mL) brown sugar
  • 1 tbsp (15 mL) baking powder
  • 2 tsp (10 mL) baking soda
  • 1 tsp (5 mL) ground cinnamon
  • pinch of salt
  • 2 tbsp (30 mL) lemon zest
  • 1 large egg
  • 1/2 cup (125 mL) honey
  • 1/4 cup (60 mL) Crisco vegetable oil
  • 1 tsp (5 mL) vanilla extract
  • 2 cups (500 mL) plain yogurt
  • 2 cups (500 mL) BC Blueberries, rinsed
  • 1/2 cup (125 mL) sliced, toasted almonds

Directions

1. Preheat the oven at 375°F (190°C).  Butter or line a 12-cup muffin tin.
2. In a large mixing bowl, whisk together flour, wheat bran, brown sugar, baking powder, baking soda, cinnamon, salt and lemon zest.
3. In another large bowl, mix together egg, honey, oil, vanilla and yogurt.  Add dry ingredients to wet until just combined and then stir in the blueberries and almonds.
4. Spoon batter into prepared muffin tin.  Bake for 25 minutes or until a toothpick comes out clean.  Cool.
Tip: You can substitute any nuts in this recipe, such as pecans or walnuts.
