Blueberry, Cheerios & Yogurt Energy Balls

Ingredients

  • 2 cups (500 mL) Western Family Quick Oats
  • 1 cup (250 mL) Multigrain Cheerios
  • 1/4 cup (60 mL) ground flax seeds
  • 1/4 cup (60 mL) chia seeds
  • pinch kosher salt
  • 1 cup (250 mL) creamy almond butter
  • 1/2 cup (125 mL) honey
  • 2 tbsp (30 mL) coconut oil
  • 1 tsp (5 mL) vanilla extract
  • 2 tbsp (30 mL) Source Vanilla Yogurt
  • 1/2 cup (125 mL) fresh blueberries
  • 1/4 cup (60 mL) dried blueberries

Directions

1. In a large bowl, combine oats, Cheerios, flaxseed, chia seeds and salt.
2. In a microwave-proof bowl, combine the almond butter, honey, coconut oil and vanilla microwave at HIGH 20 to 30 seconds, stirring until smooth.
3. Combine the almond butter mixture with the oat mixture and add the yogurt and dried and fresh blueberries. Mix well.
4. Using damp hands, roll the mixture into small balls and place on a tray lined with parchment paper. Refrigerate. These energy balls will keep in the fridge for 1 ½ weeks.

TIP: You can add ¼ cup of hemp seeds to bump up the nutrients in this mix.
