Blueberry Cream Cheese Dessert Pizza

Ingredients

  • 1 12 thin crust pizza, pre made
  • 2 tbsp butter, melted
  • 1/4 tsp cinnamon
  • Blueberry Filling:
  • 2 cups Western Family Frozen Blueberries
  • 3/4 cup water
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • 2 tbsp water
  • 1 tbsp cornstarch
  • Cream Cheese Mixture:
  • 1 package Western Family Cream Cheese, softened
  • 1/4 cup butter, softened
  • 1 tsp vanilla
  • 2 tbsp brown sugar
  • 1/2 cup powdered sugar
  • Topping:
  • 1 cup shortbread cookies, crushed

Directions

1. Heat oven at 350 degrees F.
2. Mix 2 tablespoons of melted butter with cinnamon. Then brush over the pizza crust.
3. Bake the crust for about 5 minutes or until crust is golden brown. Allow it to cool.
4. In a saucepan, combine the blueberries, water, sugars, lemon juice and cinnamon. Cook for about 3-5 minutes, until it comes to a boil.
5. While the filling is cooking, mix the 2 tbsp of water and cornstarch together.
6. Slowly pour the cornstarch mixture into the filling mixture. Stir constantly to avoid lumps forming.
7. Lower the heat and simmer for about 20 minutes, occasionally stirring the filling mixture.
8. Meanwhile, using a stand mixer, blend together the cream cheese, softened butter and vanilla until light and fluffy.
9. Add 2 tablespoons of brown sugar and powdered sugar. Mix well.
10. Spread the cream cheese mixture evenly over the pizza crust.
11. Now add an even layer of the blueberry filling over top the cream cheese mixture.
12.  Sprinkle a generous amount of the crumbled shortbread cookies overtop the pizza.
13.  Best to serve cool. Chill in the fridge for 30 min…if you can wait that long.
