Blueberry Pie Oatmeal

Ingredients

  • 1 cup Western Family Old Fashioned oats
  • 2 cups water
  • 1/2 tsp salt
  • Blueberry Mixture:
  • 2 cups Western Family Frozen Blueberries
  • 3 tbsp water
  • 2 tbsp honey
  • 1/2 tsp vanilla
  • pinch of salt
  • 1 tsp cornstarch

Directions

1. Bring water and salt to a boil in a covered saucepan.
2. Stir in the old fashioned oats.
3. Reduce heat to medium low and cook, uncovered, for 10-15 minutes. Stirring occasionally.

4. Once done, remove from heat and let stand for 5 minutes.

5. In a small saucepan, combine the frozen blueberries, water, honey, vanilla and pinch of salt.

6. Stir well to combine ingredients.

7. Add the cornstarch. Mix quickly to avoid clumping.
8. Bring to a boil and let simmer for 10 minutes, or until desired thickness.
9. Serve on top of oatmeal.
