Brussels Sprouts with Pistachios & Lemon

Ingredients

  • 3 tbsp (45 mL) butter
  • 1 small shallot, minced
  • 12 large brussels sprouts, trimmed and leaves separated from the core
  • 3/4 cup (175 mL) unshelled pistachios
  • 1 tbsp (15 mL) fresh lemon zest
  • 1 tbsp (15 mL) fresh lemon juice

Directions

1. Heat butter in large non-stick skillet over medium-high heat. Add minced shallot and stir 20 seconds.
2. Add Brussels sprout leaves and pistachios, and sauté until leaves begin to soften but are still bright green, about 3 minutes.
3. Drizzle lemon juice and zest over the sprouts. Season to taste with salt and pepper. Transfer to bowl and serve.

Hint: You can also add sautéed bacon to this dish.
