Cheesy Bacon and Pesto Ritz Bites

Ingredients

  • 1 250g package Western Family cream cheese, softened
  • 2 tbsp (30 mL) Western Family mayonnaise
  • 3 tbsp (45 mL) pesto
  • 2 jarred roasted red peppers, finely chopped
  • 2 ounces (60g) Parmesan, shredded
  • 1 85g package Maple Leaf Natural Selections bacon pieces, divided
  • 3 Ritz Original crackers crushed, more for dipping

Directions

1. Preheat oven to 350°F (180°C). Lightly spray a 4-inch shallow ceramic bowl with cooking spray.
2. Combine cream cheese, mayonnaise, pesto, peppers, Parmesan and two-thirds of the bacon. Spread in the bowl. Top with crushed Ritz crackers and remaining bacon.
3. Bake for 15 to 20 minutes until warmed through. Remove from oven and serve warm with additional Ritz crackers.
Tip: Pack this dip in a bento box with some crackers, sliced meat and veggies for your very own lunch picnic.
