Cheesy Chicken & Broccoli Rice

Ingredients

  • 2 Boneless Skinless Chicken Breasts, cut into small cubes
  • 2 tbsp (30 mL) butter
  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups (500 mL) broccoli florets
  • 3/4 cup (175 mL) whipping cream
  • 3/4 cup (175 mL) Western Family chicken broth
  • 1 tbsp (15 mL) Dijon mustard
  • 1/4 cup (60 mL) Parmesan, finely grated
  • 1 cup (250 mL) shredded cheddar cheese
  • 2 250 g packages Uncle Bens Whole Grain Brown Rice, cooked per package instructions
  • 2 tbsp (30 mL) fresh Italian parsley, chopped

Directions

1. Heat butter in a large skillet. Add onion and cubed chicken. Cook on medium heat for a few minutes until the chicken starts to brown a bit. Season with salt and pepper to taste. Stir in garlic and cook for another 30 seconds.
2. Preheat the broiler to high.
3. Add whipping cream and chicken broth. Bring to a simmer. Add broccoli florets, Dijon, and half of both cheddar and Parmesan cheese. Continue cooking for 1-2 more minutes, until broccoli softens a bit. Add in cooked rice and stir to coat the rice.
4. Sprinkle with remaining cheese and place the skillet under the broiler for a couple more minutes, just until it melts and starts to brown a bit.
5. Garnish with fresh parsley and serve.

Tip: Use coconut milk and skip the cheese to make this meal dairy-free.
