Cherry Kale Salad with Honey Lime Vinaigrette

Ingredients

  • 5 cups Kale, washed and torn
  • 1 1/2 cups (350 mL) BC Tree Fruit Cherries, cut in half, pitted
  • 1/2 cup (125 mL) sliced almonds, lightly toasted
  • 2/3 cup (150 mL) Feta cheese
  • 2 Limes, juiced
  • 1 tbsp (15 mL) Dijon Mustard
  • 2 tbsp (30 mL) honey
  • 1 tbsp (15 mL) white wine vinegar
  • 1 clove garlic
  • 1/2 cup (125 mL) vegetable oil

Directions

Mix all of the salad ingredients together in a large bowl.

In a mason jar or large cup, combine the lime juice, Dijon mustard, honey, vinegar and garlic clove. Whisk together. Slowly add the
vegetable oil while whisking (I use an Aerolatte for this, it makes perfectly emulsified salad dressings every time!).

Drizzle the dressing over the salad (you may not use it all depending on your taste) and serve.
