Chicken and Mango Salsa

Ingredients

  • The Chicken:
  • 1/4 cup Western Family olive oil
  • 1/4 cup oyster sauce
  • 2 tbsp lime juice
  • 4 boneless, skinless chicken breasts
  • The Salsa:
  • 4 medium mangoes, peeled and diced
  • 1 small red bell pepper, chopped
  • 2 green onions, finely chopped
  • 1 celery stalk, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp Western Family olive oil
  • 1 lime
  • 1 orange
  • red or yellow cherry tomatoes for garnish

Directions

  1. In a medium bowl, stir marinade ingredients together, making sure chicken is well coated. Cover and refrigerate 1 hour.
  2. Meanwhile, in a medium bowl, stir mango with red pepper, green onions, celery, cilantro and olive oil.
  3. Finely grate peel from lime and orange into bowl. Then squeeze out 2 tablespoons each lime and orange juice and mix into salsa.
  4. Preheat barbecue to medium heat and grease grill. Remove chicken from marinade and discard marinade. Barbecue chicken until juice runs clear, about 5 to 7 minutes a side.
  5. Serve chicken as is or cool to room temperature. Cover bottom of each plate with salsa. Slice chicken and arrange in a fan shape over top of salsa.
