Chicken Cacciatore

Ingredients

  • 500-750 g skinless, boneless chicken breast and thighs
  • 60 ml Western Family all purpose flour
  • 23 ml Western Family olive or canola oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 250 ml mushrooms, sliced (about 5 mushrooms)
  • 1 green bell pepper, sliced
  • 1 398 ml/14 oz can whole tomatoes
  • 1 156 ml/5 1/2 oz can tomato paste
  • 60 ml white wine or cooking wine
  • 125 ml low sodium chicken broth
  • 1 bay leaf
  • 5 ml basil
  • salt and pepper to taste

Using a plastic bag or bowl, lightly coat chicken pieces with flour. In a large saucepan, heat oil over medium heat. Add chicken and cook until golden brown, about 8-10 minutes. Remove from saucepan and set aside.

In the same saucepan, add onion, garlic, green pepper and mushrooms and cook for 3 minutes, until softened. Add remaining ingredients and return chicken to saucepan. Break up whole tomatoes with a spoon or spatula. Bring to a boil. Reduce to low, cover and simmer for about 20-25 minutes or until chicken is tender. Remove bay leaf and serve over pasta or rice.
