Chicken Enchilada Skillet

Ingredients

  • 4 Maple Leaf Prime® Boneless Skinless Chicken Breasts, cubed
  • 1/2 tsp (2 mL) each salt and pepper, divided
  • 2 tbsp (30 mL) Western Family canola oil, 100% pure
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp (15 mL) Western Family tomato paste (no salt added)
  • 1 can (28 oz/796 mL) Western Family diced tomatoes (un-drained)
  • 1 can (14 oz/398 mL) Western Family Organics black beans, drained and rinsed
  • 1 cup (250 mL) Western Family canned corn whole kernel, drained and rinsed
  • 4 tsp (20 mL) chili powder
  • 1/2 tsp (2 mL) ground cumin
  • 2 medium Western Family Original tortillas, torn into bite-sized pieces
  • 1 cup (250 mL) Western Family old Cheddar cheese, shredded
  • 2 tbsp (30 mL) Western Family Organics cilantro, chopped

Directions

  1. Season chicken with half of the salt and pepper. In large skillet, heat oil over medium high heat.
  2. Sauté onion, garlic and chicken breasts for 5 minutes, until chicken is browned. Add tomato paste and cook for 1 minute.
  3. Add diced tomatoes, black beans, corn, chili powder, cumin and remaining salt and pepper to skillet. Simmer for 17 minutes, until mixture thickens slightly.
  4. Top with torn tortillas and cheese. Broil for 2 minutes, until cheese is bubbly and tortillas are crisp. Sprinkle with cilantro.
