Chicken or Turkey Tacos

Ingredients

  • 1 tbsp (15 mL) Western Family olive or canola oil
  • 1 Onion, thinly sliced
  • 1 Red bell pepper, sliced thinly
  • 1 lb (500 g) skinless, boneless chicken or turkey breast meat, cut into strips (or lean ground chicken or turkey
  • 3/4 cup (175 mL) water
  • 2 tbsp (30 mL) taco seasoning
  • 10 Western Family taco shells, warmed or soft tortilla shells
  • Shredded cheddar cheese
  • Chopped tomato
  • Shredded lettuce

Directions

Heat oil in a large non-stick pan over medium- high heat. Add onion and red pepper. Cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender. Add chicken or turkey breast strips (or ground chicken or turkey) and cook, stirring occasionally, until turkey is no longer pink. Stir in water and taco seasoning. Bring to a boil. Reduce heat to low and cook, stirring occasionally, for 5 to 6 minutes or until mixture is thickened.

Fill taco or tortilla shells with chicken or turkey mixture. Top as desired with cheese, tomato and lettuce, sour cream and salsa.

get your kids involved in helping prepare this tasty meal. Have young children tear lettuce and older children chop red peppers.
