Chicken with Sesame Noodle Slaw

Ingredients

  • 3 Maple Leaf Prime boneless skinless chicken breast
  • 1/3 cup (75 mL) natural peanut butter
  • 1/4 cup (60 mL) hot water
  • 1/4 cup (60 mL) rice vinegar
  • 3 - 1/2 tbsp (52 mL) soy sauce
  • 2 tsp (10 mL) sugar
  • 1 tbsp (15 mL) ginger, grated
  • 2 tbsp (30 mL) sesame oil
  • 1 tsp (5 mL) sambal or any chili garlic sauce
  • 2 tbsp (30 mL) fish sauce
  • 3 cups (750 mL) Western Family spaghetti, cooked
  • 1 pkg (340 g) Western Family broccoli slaw
  • 1/2 cup (125 mL) Western Family chow mein noodles
  • 1/2 cup (125 mL) peanuts, chopped
  • 2 tbsp (30 mL) cilantro, chopped

Directions

1.Preheat oven to 400°F (200°C).

2.Bake chicken for 15 minutes or until juices run clear, turning when first side is browned.

3.Whisk together peanut butter, hot water, rice vinegar, soy sauce, sugar, ginger, sesame oil, sambal and fish sauce to make the dressing.

4.Toss spaghetti noodles with broccoli slaw and peanut-sesame dressing.

5.Slice chicken ¼ inch to ½ inch thick and arrange over noodle mixture. Top with crunchy chow mein noodles, chopped peanuts and cilantro.

Tip: Substitute cooked shrimp for chicken breast to make shrimp noodles.
