Chili Paneer

Ingredients

  • 1/4 cup olive oil
  • 1/2 medium onion, finely diced
  • 1 medium tomato, finely diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1/2 tbsp each of tumeric, ground coriander, cumin, black pepper, garam masala
  • 1/2 tsp cayenne
  • 1 tbsp salt
  • 2 tbsp tomato paste
  • 1/2 cup water
  • 1 pack paneer, cubed
  • 1 each onion, red pepper, green pepper, yellow pepper, large chopped
  • 1 lemon, halved
  • cilantro

Directions

1) In a medium pot, on medium heat add olive oil, diced onion, tomato, garlic and ginger and sauté for 4-5 minutes.
2) Stir in the turmeric, coriander, cumin, black pepper, garam masala, cayenne and salt*
3) After 2 minutes, mix in tomato paste, water and cubed paneer. Cook on medium heat for 2-3 min, stirring constantly.
4) Add in your large chopped onion and peppers and continue to cook for 5 min.
5) Remove from heat and squeeze lemon onto dish and stir.
6) Top with cilantro and serve on Sundar rice and naan.

*Add more salt and spices to taste
