Chipotle Chicken with Black Bean Rice

Ingredients

  • Chipotle Glaze
  • 4 Boneless Skinless Chicken Breasts
  • 2 cups (500 mL) Western Family orange juice
  • 5 tbsp (75 mL) Western Family honey
  • 1/4 cup (60 mL) soy sauce
  • 2 tbsp (30 mL) finely grated orange zest
  • 2 tsp (10 mL) finely chopped canned chipotle chilies in adobo sauce
  • Black Bean Rice
  • 2 tbsp (30 mL) canola oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 tsp (5 mL) ground cumin
  • 1/2 tsp (3 mL) ground coriander
  • 1 tsp (5 mL) chili powder
  • 1 can (796 mL) Western Family whole tomatoes, drained
  • 1 can (540 mL) Western Family black beans, drained and rinsed
  • 1 cup (250 mL) frozen or fresh corn
  • 2 250 g packages Uncle Bens Whole Grain Brown Rice
  • 1/4 cup (60 mL) fresh cilantro, chopped

Directions

The Glaze
1. Simmer the orange juice, honey, and soy sauce in heavy medium saucepan until reduced to 2/3 cup, about 15 minutes. Mix in grated peel and chipotle chilies.

Cooking Instructions:
1. Preheat oven to 400F. Season the chicken with salt and pepper and roast for 20 minutes. Brush chicken breasts with the chipotle glaze and cook for another 5 minutes. Remove from oven and brush with remaining glaze.
2.Cook the Uncle Bens rice as per package instructions
3. Meanwhile, in a large skillet, over med/high heat, add the canola oil. Add onions and carrots and cook for 5 minutes. Add garlic, chili powder, cumin, coriander, and cook for 2 minutes. Add drained whole tomatoes, crushing them as you add them and cook for 5 minutes.
4. Add the black beans, and the corn and cook for 5 more minutes.
5. Add cooked rice to the skillet.
6. Serve the glazed chicken breasts with the black bean rice and garnish with cilantro. Serve.

Tip: For additional heathy fats serve with sliced avocado.
