Citrus Salmon

Ingredients

  • 1 1/2 pound piece of salmon filet
  • 2 lemons, thinly sliced
  • 1 naval orange, thinly sliced
  • 4 sprigs thyme
  • 1/4 cup parsley leaves, torn, plus additional for topping
  • 1/4 cup fennel fronds
  • 1 1/2 cups olive oil
  • salt and pepper

Directions

  1. Heat oven to 300°F. Place salmon in a large baking dish and season with salt and pepper. Place lemon and orange slices and herbs on top. Drizzle with olive oil.
  2. Bake until salmon is pink inside, approximately 25 to 35 minutes. Do not overbake. The salmon should easily flake apart.
  3. Serve with fresh parsley and a squeeze of lemon juice.
