Classic Reuben Sandwich

Ingredients

  • 2 tbsp (30 mL) butter
  • 8 slices light rye bread
  • 1/2 cup (125 mL) Western Family Thousand Island dressing
  • 8 thin slices prepared corn beef
  • 1 cup (250 mL) sauerkraut, well-drained
  • 4 slices Swiss cheese
  • dill pickles

Directions

  1. Preheat a large skillet on MEDIUM heat.
  2. Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing.
  3. On 4 bread slices, layer a few slices corned beef, 1/4 cup sauerkraut and 1 slice Swiss cheese. Top with remaining bread slices,
    buttered sides out.
  4. Cook until the bread is crisp and golden brown, about 4 minutes. Flip and cook the other side is golden brown, the cheese is
    melted, and the sandwich is warmed through. Serve hot with pickles.
