Coconut Cheerios Granola with Vanilla Yogurt

Ingredients

  • 2 cups (500 mL) old fashioned rolled oats
  • 1/2 cup (125 mL) cashews, chopped
  • 1 cup (250 mL) unsweetened shredded coconut
  • 1 - 1/2 cups (375 mL) Multigrain Cheerios Ancient Grains
  • 1/4 cup (60 mL) honey
  • 1/4 cup (60 mL) canola oil
  • 1 tbsp (15 mL) vanilla extract
  • 1 tsp (5 mL) almond extract
  • 1/2 tsp (3 mL) kosher salt
  • 1 container (650 g) Yoplait Source Vanilla Yogurt

Directions

1.Preheat oven to 325°F (160°C).

2.In a large mixing bowl, combine oats, cashews, coconut and Cheerios.

3.Warm honey, oil, vanilla, almond extract, and salt in a small saucepan over medium heat until just simmering. Simmer for 5 minutes, watching carefully to not let it boil, then remove pan from the heat.

4.Pour honey mixture over oat mixture and stir well with a wooden spoon until dry ingredients are coated. Spread this mixture in a thin layer over a large baking sheet and bake for about 25 minutes, stirring every 10 minutes until the granola is well toasted. Once toasted, let granola cool on the baking sheet.

5.Portion yogurt into 4 bowls and top with granola. Serve with fresh fruit.

Tip: The granola will keep in an airtight container for up to 2 weeks, or in the refrigerator for up to a month.
