Condensed Milk Butter Cookies

Ingredients

  • 1/3 cup (80 mL) Eagle Brand Sweetened Condensed Milk
  • 4 oz (113 g) butter, softened
  • 1 cup (250 mL) Robin Hood All-purpose Flour
  • 1/2 tsp (3 mL) salt
  • 1 1/2 tsp (8 mL) baking powder
  • 1 tsp (5 mL) lime peel, zested (about ½ a lime)
  • sprinkles to decorate

Directions

  1. In the bowl of a stand mixer cream butter for 2 minutes. Add condensed milk and beat until soft and fluffy, scraping sides of the bowl to make sure everything is evenly distributed.
  2. Sift the flour, salt and baking powder into a medium mixing bowl. Add flour mixture and lime zest to butter mixture until just combined. Do not over mix dough.Roll dough into balls of your preferred size.
  3. Line cookie sheets with parchment paper and place cookie balls, leaving at least 1.5 inches between each cookie.
  4. Chill cookies for 2 hours before baking.
  5. When ready to bake, preheat oven to 325 F (160 C). Bake for 8 to 10 minutes, until edges turn golden. Make sure you keep an eye on cookies, while baking, because they can easily burn.Top with sprinkles and cool.

Tip: You can roll the dough out and cut into shapes.Refrigerate before baking.
