Creole Fried Rice

Ingredients

  • 4 cups (1L) Western Family long grain white rice, cooked
  • 1/4 cup 60 mL canola oil, divided
  • 2 red peppers, thinly sliced
  • 4 green onions, sliced
  • 4 cloves garlic, minced
  • 2 tsp (10 mL) paprika
  • 1/2 lb (500g) Schneiders ham, cubed
  • pinch cayenne pepper
  • 1 lb (500g) fresh shrimp, cooked
  • 2 tsp (10 mL) lemon zest
  • 2 tbsp (30 mL) Western Family Organics parsley, finely chopped
  • Salt and pepper to taste
  • Hot sauce, on the side

Directions

Directions
1. In a large non-stick skillet, heat 2 tbsp of canola oil over medium-high heat. Add red peppers and sauté for 2 minutes.
2. Add green onions, garlic, paprika, ham and cayenne pepper. Sauté for another 2 minutes.
3. Add remaining canola oil and cooked rice. Cook, stirring ingredients to fry for another 4 minutes. Remove from heat and stir in shrimp, lemon zest and parsley. Season to taste with salt and pepper and serve with a side of your favourite hot sauce.
Tip: Get a boost of greens by adding broccoli, peas or spinach into the rice dish.
