Curried Chicken Celery Snack Sticks

Ingredients

  • 1/2 cup (125 mL) Oikos Plain Greek Yogurt
  • 1 tbsp (15 mL) curry powder
  • dash hot sauce
  • 1 tsp (5 mL) honey
  • 2 cups (400 g) shredded rotisserie chicken meat
  • 2 green onions, sliced
  • 1/2 red pepper, finely sliced
  • 2 celery stalks, finely chopped
  • 1/4 cup (60 mL) raisins, chopped
  • 2 tbsp (30 mL) cilantro, chopped
  • salt to taste
  • 4 celery stalks, cut into quarters

Directions

1.In a large bowl, whisk together yogurt, curry powder, hot sauce and honey.

2.Add chicken, green onions, red pepper, celery, raisins, and cilantro and fold together until well combined. Season to taste with salt.

3.Serve on top of quartered celery stalks as a snack.

Tip: Serve the left over curried chicken in a sandwich or on top of a green salad as an alternative.
