Gimme Lean Breakfast Burrito

Ingredients

  • 1 package Lightlife Gimme Lean Sausage
  • 2 tbsp Vegetable oil, divided
  • 1 poblano pepper, diced
  • Cilantro, chopped finely
  • 1 medium tomato, diced
  • 1 avocado, halved and sliced
  • 1 cup (250 mL) shredded cheddar or vegan cheddar cheese (optional)
  • 4 large flour tortillas (20-25cm)
  • 1 cup (250mL) salsa

Directions

Heat 1 tablespoon oil in skillet. Add poblano pepper and sauté for two to three minutes, or until tender.  Set aside.

In another skillet heat the remaining 1 tablespoon of oil and brown the Gimme Lean® Sausage, crumbling it as you stir.  Mix-in cilantro and cooked poblano pepper.

Place Gimme Lean® Sausage mixture evenly on each flour tortilla.  Top with tomatoes, avocado and sprinkle with cheese, if desired.  Roll burrito and serve.  Serve with salsa.
