Greek Yogurt Banana Pecan Bread

Ingredients

  • 1 - 1/2 cups (375 mL) all-purpose flour
  • 1 - 1/2 tsp (8 mL) baking soda
  • 1/2 tsp (3 mL) sea salt
  • 2 large eggs, lightly beaten
  • 2 medium, ripe bananas, mashed
  • 1/2 cup (125 mL) Danone Oikos plain 4% Greek yogurt
  • 1/4 cup (60 mL) maple syrup
  • 1/4 cup (60 mL) brown sugar
  • 1/2 cup (125 mL) pecan halves, chpped

Directions

1.Preheat your oven to 350ºF (180ºC), and lightly grease a 9 x 5 loaf pan.
2.In a large bowl, combine flour, baking soda, and salt. Stir until well combined and set aside.
3.Lightly beat eggs in a medium sized mixing bowl. Add mashed bananas, Greek yogurt, maple syrup, and brown sugar. Stir until well combined.
4.Pour wet ingredients into the dry ingredients and stir gently. Stir in the chopped pecans. Do not over mix.
5.Pour batter into the loaf pan, spreading it out evenly, and bake for 35-40 minutes, or until a toothpick inserted into the middle comes out clean.
6.Remove from oven and let cool for about 10 minutes before transferring to a cooling rack.

Tip: Add ½ cup of chocolate chips to this recipe for a little sweet treat.
