Grilled Haloumi Summer Salad

Ingredients

  • 250 g haloumi cheese
  • 1/4 cup (60 mL) extra virgin olive oil
  • 2 tbsp (30 mL) apple cider vinegar
  • 1 mini watermelon, peeled and cut into chunks
  • 8 Roma tomatoes, quartered
  • 1/4 small red onion, very thinly sliced
  • 4 fresh mint leaves, finely chopped
  • 5 fresh basil leaves, finely chopped
  • salt and pepper to taste

Directions

1. Heat a non-stick frying pan, griddle pan or light a BBQ. Cut haloumi into 6-8 slices, brush with olive oil and grill quickly on each side for 2 minutes until lightly grilled.
2. In a small bowl, whisk together the olive oil and the cider vinegar.
3. On a medium platter, arrange watermelon and Roma tomatoes. Sprinkle with red onion, mint and basil and drizzle with dressing. Season with salt and pepper and top with grilled haloumi. Serve.
Tip: This salad makes a great side to any bbq meal.
